A Dham is the traditional festive feast of Himachal — slow-cooked by a hereditary cook called a botihal, served sitting on the floor on a leaf pattal, and eaten in a set order. The Kangra version is built around dishes like madra (yoghurt-and-chickpea curry), rajma, sepu vadi, a sweet-sour khatta and steamed rice, finished with a sweet mittha.
